Dry Jerk Rub

I found this on the web if anyone is interested in making their own jerk rub. Why they call it a jerk rub I don't know... Maybe jerks need rubbing too, who the hell knows hehehehe. Anyhow, I'm going to make jerk chicken nachos tonight and can't wait for the jerk rub I bought from Pampered Chef to get to me so I'll try making my own. Here it is:

2 tablespoons dried minced onion
1 tablespoon garlic powder
4 teaspoons crushed dry thyme leaves
2 teaspoons salt
2 teaspoons ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 tablespoon sugar
2 teaspoons black pepper
1 teaspoon cayenne pepper

I made a "kind of jerk rub" hehehe. I didn't have thyme, cayenne pepper, and allspice so I substituted them with parsley, red pepper flakes, and more nutmeg :-) It still turned out really well and I have a lot left over for many more uses.
